My husband suggested to me the other day that maybe I might like to write about something other than him on my blog. Particularly, he suggested that he could no longer be the butt of all my jokes.

The Blueberry Popsicles?
Well, I guess that could keep us interested for a little while.
I find that popsicles just remind me of summer. They remind me of my childhood. Afternoons at the local pool. Afternoons running around in the backyard with the sprinkler and paddling pool. Afternoons playing with cousins and kids from the neighbourhood followed by a cooling sticky lemonade popsicle and of course brain freezes from eating them too fast to avoid it melting in the summer heat. I also remember my Mum always having homemade juice popsicles on hand.
Like any good Mum, mine was all about giving my brother and I a healthy diet. As kids though we didn’t quite see eye to eye with Mum on that one and would much prefer Wattie’s store bought tomato sauce (ketchup) over Mum’s homemade variety, powdered fruit drink over freshly squeezed orange juice, and over processed food colouring saturated biscuits (cookies) over Mum’s homemade ones. Oh Mum, I’m sorry, I totally get where you were coming from now. Too late? Funnily enough her homemade popsicles were da bomb. We loved them. They were awesome. I remember how much I loved to make them with her and how delicious they were to suck out all the sweet juice and leave an icy shell to crunch on after.
My three year old George is definitely on Team Kate circa 1980s not Team Kate the Mummy circa Present Day. He is a campion for anything sweet and processed. It is a daily struggle of mine to get healthy food with some nutritional value into him. Our lovely babysitter Shelley went above and beyond the call of duty as a babysitter once trying to get dear George to eat his greens by doing her best Wonder Woman impersonation and lifting up our couch to display the super-strength broccoli can give you. I think all she got was a good work out, hopefully not a pulled back, and sadly an uneaten plate of broccoli. Massive high five Shelley! Like his Mummy though, George loves homemade popsicles. I can hide anything in those puppies…berry smoothies, chia seeds, protein powder…and he just loves my Blueberry Popsicles….and so do I! You can literally make them in less than five minutes (plus four hours to freeze, but you’re not doing anything in that time so I don’t count it).
I’m a bit of a geek and did science at school so here you have it, the recipe summed up in two equations:
Blueberries + honey + lemon zest + yoghurt + food processor = Blueberry Popsicles
Blueberry Popsicles + coconut oil + dark chocolate = One Awesome Summer Treat!
If you’re not into science (fair call, I’m not much into English literature so each to their own) then I suggest you just skip right on past those equations and head down to the recipe (after reading this of course).
The Blueberry Popsicles with a hint of lemon and fragrant sweetness from the honey are great on their own. They are even healthy enough to have for breakfast if you’re that way inclined or perhaps living somewhere super hot. They are even better taken to the next level. Yes, you can pimp your popsicle! Drizzle over some dark chocolate and sprinkle with some crunchy freeze-dried blueberries and you have one gorgeous looking (and pretty healthy, but don’t tell the kids) summer treat….that the kids (and grown ups) will love.
While you’re making the chocolate drizzle for the top, you may want to double the recipe. The chocolate drizzle is actually homemade Ice Magic! Whoop whoop! Who doesn’t love the magic and theatre of drizzling over chocolatey Ice Magic and seeing it harden before your eyes. Well, this is a homemade version with just two ingredients. I know, you’re probably thinking, she’s turned into her Mum so kids will spot the difference and turn their noses up at the homemade stuff in favour of the processed store bought kind. No. They will love it I tell you. George who is a super sleuth when it comes to anything healthy loves it!
So, there you have it. A whole blog post without even mentioning some silly thing that my husband has done this week like this morning when he was making a tea for me…whoops…
- 300g/10.5oz blueberries
- ¼ cup runny honey
- 2 cups Greek yoghurt
- fine zest of one lemon
- 100g/3.5oz chocolate (70 percent cocoa solids), finely chopped
- 30g/1oz coconut oil
- 2 Tbsp freeze-dried blueberries (see Note)
- Place the yoghurt and honey in a blender or food processor and blend until fully combined. Transfer to a medium size bowl and stir through the yoghurt. Either completely combine or leave it looking marbled if you prefer that effect.
- Transfer to 10 popsicle moulds and insert sticks. Place in the freezer for at least 4 hours or until frozen.
- When ready to serve melt chocolate and coconut oil together in a small saucepan. Remove popsicles from moulds by running the moulds until a little warm water to release them. Drizzle over the chocolate drizzle using a teaspoon and sprinkle over the slightly crushed freeze-dried blueberries. Serve immediately.
