What to do with left over homemade marshmallows? Hot chocolates of course! Even better, boozy, creamy, chocolaty hot chocolates made from scratch in less than 10 min!
After I had baby George I became obsessed with hot chocolates (or hot cocoa for all you North Americans out there). Whilst he is absolutely the most wonderful child in my eyes, he has never has been the best sleeper. So for some time, whilst I was nursing him, I didn’t drink coffee thinking that would help with his sleep. I’m not sure if it actually did, but I was willing to try anything. Thank goodness I’m back to drinking coffee now but when I wasn’t I still really craved a comforting hot drink. Solution? Hot chocolates. Not only are they oh so comforting, they felt like a a little treat and are a great pick me up on those tough days (and nights).
I have two absolutely wonderful friends. Actually I am blessed with lots of beautiful, lovely friends and family. But these two are my hot chocolate buddies. The three of us actually met at pregnancy yoga (I totally recommend it to any pregnant ladies out there) and had our little ones around the same time. At least once a week, sometimes more, we all meet up and have an extra sweet, extra chocolaty hot chocolate. Some days we are lucky enough to sit down and enjoy our drinks for a short time, but most days little sips are taken in between chasing the ensuing chaos. I think last week was the first time ever that the three of us sat down for more than five minutes and the toddlers played by themselves – hopefully a sign of things to come! As any Mum will attest to, the first year can be hard work. These ladies (and hot chocolates) got me through the first year.
Now before you start calling child services, you don’t have to worry, we don’t actually have the boozy grown up hot chocolates at our play dates (as much as we would like too)! These grown up hot chocolates are merely inspired by my hot chocolate buddies. These are for when all the lovely little children are sound asleep, tucked into bed and are a nice treat for Mummy and Daddy. In saying that, these hot chocolates use real chocolate with a touch of vanilla, so are a treat for anytime of day even without the liqueur. What makes them even better is that they are made from scratch in less than 10 minutes. So why would you use a pre-made mix again when you can have a deluxe hot chocolate like this in the same time? Feel free to use store bought marshmallows, I normally use these but I must say that if you have the time, homemade marshmallows really do make it extra special. As for which liqueur to use? The choices are endless! My go-tos are coffee and peppermint flavours and of course my all time favourite – whisky!
Whether you’ve just spent a day looking after the kids or a baby, had a long and tough day at work or its just been one of those days – sit down, put your feet up and enjoy a grown up hot chocolate – you deserve it!
Grown Up Hot Chocolate
- 2 cup full-cream milk
- 70 g 2.5 oz dark (70% cocoa) chocolate
- 1 tsp vanilla extract
- 2 Tbsp your favourite liqueur
- 2 homemade marshmallows
Place the milk, chocolate and vanilla in a small saucepan and whilst whisking slowly bring to the boil.
Remove from heat, mix in the liqueur then divide between two mugs. Top with marshmallows and serve immediately.
