I think my subconscious knows its Halloween because since last week I have been obsessed with The Vampire Diaries. I am so embarrassed to admit that despite being in my early 30s, my inner tween has come out yet again (yes, I admit that I was a secret fan of the Twilight series too). I’ve started halfway through season four and despite having a university education under my belt I have no idea what is going on, I really underestimated this teen show, the plot is surprisingly complex! But tonight, while I wait for the trick or treaters, I think I might revisit (a.k.a. subject my husband to) all the old favs like The Craft, Scream and Ghostbusters (nothing too scary here, I’m a big whimp). While doing so we’ll be enjoying this delicious Lychee Vodkatini or “Eyeball” Vodkatini.
I’ve been lucky enough to spend a bit of time in Malaysia with work and there I was able to discover many delicious tropical fruits including lychees. I also discovered the not so delectable durian, but that’s another story. Lychees have a sweet and almost floral flavour, and I think they are just delicious eaten simply by themselves or with ice-cream. They also go just great in cocktails! This drink is actually one of my favourites to serve in summer. I normally serve it with just one lychee, however, if you add two I think they kind of look like creepy eyeballs making it perfect for Halloween. The drink is super easy to put together making it a perfect starter for my new series and anyone new to making cocktails.

Lychee Vodkatini
Ingredients
- 2 whole canned lychees plus 60mL (2 oz) drained juice/syrup
- 60 mL 2 oz vodka. See note 1.
Instructions

Fill one martini glass and a cocktail shaker with ice. See note 2.

Pour reserved juice/syrup and vodka into cocktail shaker.

Shake well.

Discard ice from glass and place two lychees in the glass. Strain the cocktail into the glass and serve immediately.
Recipe Notes
Note 1. Also works great with gin.
Note 2. By filling the martini glass with ice while you make the cocktail you will chill the glass and subsequently the cocktail.
