Happy Friday everyone! I hope everyone’s week went well. Will, George and I just came back from a few days in Melbourne, Australia. Can’t wait to tell you all about it and all the glorious, oh so glorious, food! It was our first trip away with George, and whilst it was a good first effort, by the end he was ready to come home to his toys and ‘miaow miaow’ a.k.a. Hunter the cat. The four hour plane ride was certainly fun especially with a toddler who thinks he’s a cross between Johnny Knoxville and Bear Grylls! I’ll leave it to you to imagine how that one went.

I came up with this drink for my friend’s baby shower earlier this year. It was a very hot February day but my freezer was packed full of food for the baby shower so I didn’t have any room for ice. Oh dear! Solution: I used the frozen raspberries I had in the freezer as ice! They worked perfectly, not only did they cool the water down but they also gave it a beautiful pink hue, perfect for the Baby Girl themed baby shower. To make it even more refreshing I added a few sprigs of mint and there I had it a super refreshing, slightly sweet drink that was an even bigger hit than the fancy champagne I also had on offer. Who would have thought?! Since then I’ve made this multiple times, even adding a dash of vodka or white rum for a little kick. So as the weather gets warmer make sure you have some frozen berries in the freezer for standby ice cubes and to make this Refreshing Raspberry and Mint Water.

Refreshing Raspberry and Mint Water

Prep Time 5 minutes
Total Time 5 minutes
Servings 8 -10

Ingredients

  • 1 1/2 cups frozen raspberries
  • 3 sprigs fresh mint approximately 20-30 leaves
  • 8 cups 2 Litres/0.5 US gallon sparkling or still water

Instructions

  1. Mix everything together in a large pitcher. Leave for 5-10min to allow the raspberries to melt slightly and give the water a lovely pink hue.
  2. Serve!
