Spicy Kidney Bean Dip

Ingredients

  • 1 large clove garlic
  • 1/4 red onion or 2 spring onions
  • 1/4 cup fresh flat leaf parsley
  • 1/4 cup fresh coriander cilantro
  • 1 tsp nutmeg
  • 1 medium jalapeƱo pepper optional
  • 1 Tbsp tomato paste
  • 2 Tbsp extra virgin olive oil
  • 1 can 400g/14oz red kidney beans
  • 2 Tbsp lime juice
  • sea salt and freshly cracked black pepper to taste

Instructions

  1. In a food processor, roughly blend first eight ingredients.
  2. Add kidney beans and pulse until combined.
  3. Add lime juice until desired consistency is reached.
  4. Season with salt and pepper to taste.
