Healthy Chocolate Banana Granola

  • 3 cups rolled oats
  • 1 cup shredded coconut
  • 1 1/2 cups raw mixed nuts such as almonds, walnuts, pecans, hazelnuts, brazil nuts or cashews
  • 1 tsp sea salt
  • 6 Tbsp cacao or cocoa powder
  • 1/2 cup coconut oil melted
  • 2/3 cup maple syrup or honey
  • 2 tsp vanilla extract
  • 1 1/2 cups mashed banana about 4 medium bananas


  1. Preheat oven to 180C/350F fan bake.
  2. Mix together the oats, coconut, 1/2 cup nuts, sea salt and cocoa in a large bowl. Roughly chop remaining 1 cup of nuts and add to the dry ingredients.
  3. In a separate bowl mix together the coconut oil, maple syrup and vanilla and add to the dry ingredients along with the mashed banana. Mix well to combine.
  4. Lay out mixture over two lined baking trays and place in the oven to bake for 15-25min, turning every 5 mins. The nuts in this mixture can burn really easily so keep a close eye on the granola during cooking and give it a good turn every 5 min. If you have a hot oven you may like to set it to 160C/320F.
  5. Allow to cool completely before storing in an airtight container for 2-3 weeks.
