  • 65 g butter 2.3oz or half a stick at room temperature
  • 1/4 cup caster sugar
  • 1 egg
  • 3/4 cup ground almonds
  • 1/2 Tbsp flour


  1. Cream butter and sugar until light and fluffy. Add egg and mix until incorporated.
  2. Stir in ground almonds and flour.
  3. Mixture will keep for 2 weeks in the fridge or up to 3 months in the freezer.
