Hot Smoked Salmon and Soba Noodle Salad

Ingredients

  • 200 g soba noodles
  • 125 g green beans halved lengthways and widthways
  • 2/3 cup cucumber seeds removed and thinly sliced
  • 2 Tbsp dill roughly chopped
  • 2 large radishes thinly sliced
  • 200 g hot smoked salmon
  • small handful of rocket arugula

Dressing

  • 1/3 cup mayonnaise
  • 1/2 lemon juice and zest
  • sea salt and freshly ground black pepper

Instructions

For the dressing

  1. Lightly whisk together the mayonnaise, lemon zest and juice then season to taste.

For the salad

  1. Bring a large pot of salted water to the boil. Add soba noodles, cook for 3 minutes then add the green beans. Cook for another 3 minutes or until the noodles are tender and the beans are cooked but still crisp. Rinse immediately under cold water in a strainer (colander or sieve) to stop the cooking process. Allow to drain.
  2. In a large bowl toss together the noodles, green beans, cucumber, dill, radishes and rocket (arugula).
  3. Divide salad between 4 bowls and flake the hot salmon on top. Drizzle with the dressing and serve.

Recipe Notes

If you are gluten-free be sure to read the packet of the soba noodles and be sure to only get ones that contain 100 percent buckwheat. Some contain wheat flour.
