Chunky Guacamole

An easy and simple to make guacamole that is perfectly balanced in flavour!

  • 1 avocado, diced into 1cm/1/2in chunks
  • 1/2 red onion, very finely diced
  • 1 medium ripe tomato, diced
  • 1/2 jalapeño, ribs and seeds removed, very finely diced
  • 1/4 cup fresh coriander (cilantro), roughly chopped
  • 1/2 lime, juiced
  • sea salt and cracked black pepper to taste
  • corn chips, to serve


  1. Combine all the ingredients in a medium bowl. Season, generously, to taste. Serve alongside corn chips as a snack, on tacos, accompanying grilled fish or even as a side salad.
  2. Best eaten on the day of making.

Recipe Notes

Note: I’ve suggested a jalapeño pepper, but any chili is fine, just check the heat first.
